The Bhutanese Cuisine

Bhutan has a fondness towards chili. So much so, that they use it as a vegetable instead of a condiment. With rice being the nation-wide consumed staple, you can end up in any household & find a steaming bowl of the staple grain served with curries made up of chilies, assorted meats & cheese. Any dish cooked with cheese are called "Datsi". Ema-Datsi is chili cooked up in a gravy base with the final addition of cheese into it. Kewa-Datsi comprises of a potato-chili spiced gravy seasoned with soft, mildly pungent homemade cheese cured out of yak milk with a liquid, curd like consistency. Shamu-Datsi is a mushroom gravy flavoured with the same yak cheese that gives it a signature aroma and taste.
